Not instantly. Every gift card order runs through our fraud check and is released by a person, so a card bought on a business day usually sends within a few hours, and one bought on a Saturday goes out Monday. If you need it for a specific day, schedule it and it will be queued for that morning.
Gift cards are the single most abused thing a store sells, and a stolen card sends a code that cannot be recovered. Reviewing each one by hand is the reason we can keep selling them, and it is the only step between checkout and the inbox.

Send us the order number and the correct address. We void the original code and issue a new one, usually the same business day.
